Ingredients
| 2 lbs | potatoes |
| salt | |
| 1 pack | bacon (16 oz) |
| 2 cups | flour |
| 1 ½ tsp | baking powder |
| 1 cup | milk |
| 1 | egg |
| 2 | bunches of fresh chives |
| 3 tbsp | butter |
| 8 | slices of cheddar cheese |
Instructions
Step 1:
Peel the potatoes, cube and cook for approx. 15 minutes in salted boiling water. While the potatoes are boiling, fry the bacon in a pan (without oil) until crispy. Wash the chives, shake dry and chop.
Step 2:
Drain the potatoes and mash. Add the flour, baking powder, salt, milk and egg and combine. Mix the chives into the dough.
Step 3:
Grease the waffle iron with butter. First fill the waffle iron with 2 tbsp batter, then layer with cheese and bacon and top with 1 tbsp dough. Bake util cooked through (for a few minutes depending on the waffle iron).
Tip:
If preferred, it can be served with a warm cheese dip.
