Cook Healthy

Vitamins, nutrients, and natural flavors are largely preserved during pressure cooking.

  • Minimal liquid and high boiling temperatures cause steam to displace oxygen almost completely during heating.
  • Once the valve closes and cooking begins, there is hardly any oxygen left inside the pot – preventing the breakdown of vital nutrients.
  • This method is especially gentle for sensitive vitamins, such as Vitamin C, which can be retained up to 90% compared to traditional cooking.

Ingredients also retain their natural color. That’s why meals prepared under pressure are not only flavorful – they’re visually appealing, too.

How to Use a Pressure Cooker

Pressure cookers build up steam in an airtight sealed pot to create pressure. This pressure raises the boiling point of liquids from 212°F to up to 241°F, allowing food to cook faster.

The lid, equipped with a patented safety system and the Fissler sealing ring, locks securely and airtight.

As the pot heats up, steam is generated and displaces the oxygen—protecting valuable vitamins and nutrients inside.

How to Use Your Pressure Cooker:

  • Fill the pressure cooker with the minimum amount of liquid. The exact amount depends on the recipe. Use the integrated measurement markings to fill accurately. Never exceed the maximum fill level stated in the user manual.
  • Close the lid. The pot seals hermetically as it heats up.
  • As the water boils, steam is generated and oxygen escapes.
  • Once the oxygen has been released, pressure builds up inside the pot. This pressure increases the internal temperature.
  • The cooking indicator shows the current pressure level.
  • When the first ring appears, you can reduce the heat. Cooking time begins.
  • Food cooks at temperatures of up to 241°F.
  • After cooking, release steam safely using the steam release function on the control valve or handle. Different models may have different methods—refer to your user manual.
  • Thanks to the higher temperatures, cooking times can be reduced by up to 70%.

The Cooking Levels

The pressure cooker's cooking levels allow food with varying sensitivity to heat to be cooked to perfection. Our cooking time finder helps you choose the right setting.

Depending on the model, multiple cooking levels are available, each influencing cooking duration. The general guideline for cooking times with the Vitavit® Premium (including previous models) is:

Level 3 241°F, Express Setting
Equals approximately ⅓ to ½ of the cooking time in a traditional pot and is ideal for meats or stews.

Level 2 - 235°F, Fast Cooking Setting)
About 25% longer than Level 3 and well suited for less delicate vegetables.

Level 1 - 230°F, Gentle Cooking Setting
Approximately 50% longer than Level 3 and suitable for delicate vegetables or fish.

Shorter cooking times can save up to 70% for stews and braised dishes, and between 20–50% for vegetables.

The Vitavit® Premium also features a non-pressurized steaming level for gentle cooking using the insert. Its predecessor model includes only two cooking levels, equivalent to those of the Vitaquick® Premium.

Different Sizes for Every Use

Fissler pressure cookers are available in a variety of sizes. Depending on the dish and number of servings, you’ll find the ideal model at Fissler:

  • 2.6 qt: serves 1–2 people
  • 3.7 qt: serves 2–3 people
  • 4.8 qt: serves 2–3 people
  • 6.3 qt: serves 3–4 people
  • 8.5 qt: serves 4–5 people
  • 10.6 qt: serves more than 5 people (available in Vitaquick® Premium only)

Cleaning Your Pressure Cooker

To keep your pressure cooker in excellent condition for years to come, proper cleaning is essential. The pot body and lid (except for attached components) are dishwasher-safe, making cleaning quick and easy.

For the lid’s removable components, follow these steps:

  • Remove the sealing ring, cooking crown, and lid handle. Clean them by hand using a damp cloth.
  • To detach the lid handle, turn the fastening screw on the inside counterclockwise. To remove the cooking crown, turn the bell-shaped nut on the inside counterclockwise.
  • After cleaning, reattach all components securely. Ensure that the valve gasket is seated properly in its designated groove and fits tightly against the cooking crown. The sealing ring must also be inserted into the correct groove around the lid rim.
  • Regular use of stainless steel care products helps preserve the polished surface.

Important: Wear parts (such as the sealing ring) should be replaced after 400 cooking cycles or every 2 years—whichever comes first.

2-Piece Vitaquick® Premium Pressure Cooker Set

The Vitaquick® Premium pressure cooker sets include one pressure skillet – 2.6 qt (2.5 L) or 4.2 qt (4.0 L) – and one larger pressure cooker – 4.8 qt (4.5 L) or 6.3 qt (6.0 L), depending on the set. This makes you perfectly equipped for small portions for 1–2 people as well as larger meals for 2–4 servings.
