Fissler’s 18/10 stainless steel is rustproof and exceptionally durable. It withstands intense heat and is ideal for high-temperature cooking.

To ensure superior heat conductivity, each Fissler stainless steel pan features an aluminum core within the base. This allows for fast and even heating thanks to the thick, multi-layered capsule bottom.

What Is a Stainless Steel Frying Pan Used For?

Use a stainless steel frying pan to sear meat, poultry, and seafood to perfection. With the Original-Profi Collection® Frying pan featuring the Novogrill® surface, you can achieve a crispy sear even with little fat. Stainless steel pans are also excellent for quickly sautéing vegetables.

Cooking Without Sticking – Here’s How to Succeed with Uncoated Frying Pans

  • Food can easily stick in pans without a nonstick coating, so stainless-steel cooking takes a little practice.
  • The key to success is the right temperature: the pan must be hot enough so that food naturally releases from the surface after a short time.
  • For searing unbreaded meats like steaks, skewers, chops, and lamb filets—or grilled vegetables—you only need a small amount of oil.
    For breaded foods, potato pancakes, and batters, we recommend using a bit more fat.

Pro Tip: Whether food sticks or not depends mainly on the temperature and the right time to flip. Especially when cooking meat, poultry, or potatoes, be patient. Wait until a consistent golden crust has formed and is visible around the edges—then your crispy creations will lift easily from the surface.

Proper Care for Your Stainless Steel Pan

Dishwashers can damage metal surfaces. Acids and proteins may also leave stains on uncoated stainless steel. For a lasting shine, Fissler recommends using Fissler Stainless Steel Polish. Its special ingredients protect against corrosion and prevent new stains from forming. With regular care, stainless steel becomes more resistant to stains and easier to clean over time.

If stubborn fat or protein residues are burned onto the bottom or sides and cannot be removed with Fissler Stainless Steel Cleaner, try soaking the pan:

  • Fill a larger pan with water, a pinch of baking soda, and a drop of dish soap, then bring to a boil.
  • Place the affected pan into the cleaning solution to soak.
  • After about 20 minutes, remove the residue using a dishcloth or sponge.

Uncoated Pans with Novogrill® Surface

The Novogrill® frying surface with its distinctive honeycomb texture allows for searing and roasting with very little oil. Stainless steel pans from the Original-Profi Collection® feature this special surface. The raised grill pattern distributes oil evenly and is perfect for crisp, low-fat cooking.

When used with little or no oil, small air pockets form in the grooves. This allows the oil to spread evenly beneath the food. The ingredients are grilled on the raised sections, minimizing direct contact with the surface. As a result, the Novogrill® structure helps reduce sticking – even without a nonstick coating.
