Ratatouille au gratin with fried gnocchi

Ratatouille is a braised vegetable dish or vegetable stew from the Provençal cuisine of Nice.

Gnocchi have a long tradition in Italian cuisine. They are almost always made from potatoes, but there are regional differences in how they are prepared. For example, wheat or corn semolina is preferred in gnocchi alla romana.

These small dumplings enjoy particular popularity in Verona in northern Italy. Even today, delicious gnocchi are distributed in huge quantities to passers-by during Carnival in front of the famous Basilica di San Zeno Maggiore.

Ingredients

2 cups gnocchi
1 eggplant
1 zucchini
1 vine tomato
1 onion
1 red chili
1 clove of garlic
1 bunch oregano
2 tbsp. parmesan
1 cup tomato puree
1/2 cup water
5 tbsp. olive oil
salt
pepper
sugar

Instructions

Step 1:

 

Peel the carrot and onion and cut into thin strips. Wash the cabbage and leek. Cut into strips. Peel garlic and ginger and chop finely.

Step 2:

Remove stalk from chili pepper, cut in half lengthwise, remove seeds as desired to reduce the level of spiciness, and cut diagonally into fine strips. Halve tomato, remove core, and cut into ½” cubes. ||

Preheat oven to 390°F (convection oven) or 430°F (upper and lower heat). Heat 2 tbsp. oil in a pan and sauté eggplant, onion and chili pepper at medium heat for 2 minutes. ||

Add garlic and tomato. Sauté for another minute. ||

Step 5:

Deglaze with ½ cup of water and tomato puree. Add salt, some sugar and pepper to taste and simmer for 10 minutes. ||

Step 6:

Meanwhile, put oregano tips aside for garnish, remove remaining leaves from stems and chop finely. Finely grate Parmesan. ||

Step 7:

Mix oregano with ingredients in the pan, and then transfer ratatouille into an ovenproof dish. Spread Parmesan cheese on top and bake for 10 minutes on a middle rack until cheese has melted. ||

Step 8:

Heat 3 tbsp. oil in same pan and fry gnocchi on medium heat for 9 minutes until crispy, turning frequently. ||

Step 9:

Remove ratatouille from oven and arrange it on a plate with gnocchi. Garnish with oregano leaves. ||
