Pulled Pork Carnitas

Ingredients

  • 3 lbs (1.5 kg) pork tenderloin
  • 2 tbsp olive oil
  • Salt & pepper
  • 1 large onion
  • 3 garlic cloves
  • 2 jalapeño chile peppers
  • 2¼ cups (400 g) chopped tomatoes
  • 1 tbsp dried oregano
  • ½–1 tsp chili powder
  • 2 tsp ground cumin
  • Juice of 2 oranges
  • 1 small onion
  • 6 tbsp (90 ml) lime juice
  • 4 finely diced tomatoes
  • 8 taco shells
  • 2–3 handfuls of romaine lettuce, in strips
  • Cilantro leaves

Directions

  1. Pat the pork dry, drizzle with 1 tbsp oil and season with salt and pepper.
  2. Peel and coarsely dice the large onion and garlic. Wash, trim and finely chop the chile peppers.
  3. Heat the remaining oil (1 tbsp) in the pressure cooker and sear the meat all over.
  4. Add the diced large onion and garlic and let caramelize slightly.
  5. Stir in the chopped tomatoes, half of the diced chile, and the oregano and spices.
  6. Measure orange juice and top up with water to 1¼ cups (300 ml), then pour into pot.
  7. Seal the pot, heat on the highest setting and cook on setting 3 (cooking indicator: 2nd ring) for 30 minutes.
  8. Peel and finely dice the small onion and put it in a bowl with the rest of the diced chile, ¼ cup (60 ml) lime juice, ¾ tsp salt and the finely diced tomato. Leave the salsa to marinate briefly.
  9. Remove the pot from the heat, release the steam, remove the meat, pull it into strips, then put it back into the pot to marinate in the juice.
  10. Season with salt, pepper and the remaining lime juice.
  11. Warm up the tacos, fill them with lettuce and meat, top with salsa and serve with some cilantro leaves.
