Ingredients
2 lbs | pork butt (or pork shoulder) |
2 tbsp | olive oil |
1/2 cup | beef broth |
1 tbsp | liquid smoke |
1 | sweet onion (diced) |
1/2 cup | Whiskey (recommend Rye) (dry rub) |
3/4 cup | brown sugar |
2 tsp | salt |
1 tsp | pepper |
1 tsp | cayenne pepper |
1 tsp | garlic powder |
Instructions
1. Cut pork into fist-sized chunks or smaller.
2. In a large bowl, season the pork generously with the dry rub consisting of brown sugar, salt, pepper, cayenne pepper, and garlic powder. Rub all over the meat and let sit at room temperature to marinate for at least 5 minutes, you can also marinate overnight in the refrigerator, if desired.
3. Turn knob on pressure cooker to level 3.
4. Heat the pressure cooker on medium high heat and add olive oil.
5. Add pork and sear on all sides to brown but do not burn.
6. Once seared, add the beef broth, liquid smoke, diced onion, whiskey and any remaining marinade left over from the dry rub.
7. Close the pressure cooker and lock the lid. Heat on high heat to build pressure.
8. Once full pressure is reached and the green ring shows, reduce heat to low.
NOTE: Maintain the heat so the indicator is on the green ring throughout the cooking time. If the ring goes to red it means the heat is too high (lower it), if it goes to yellow it is too low (increase the heat slightly)
9. Cook for 20 minutes.
10. Release the pressure cooker by either:
· Letting it stand and naturally release (about 10 min).
· Manually pushing the release handle or turning the nob to steam (slowly)
11. Carefully open the lid. Remove pork and pull apart while hot with two forks.
12. Serve on your favorite bread to make a bbq pulled pork sandwich or with tortillas and salsa (carnitas).
