Penne in a Salsiccia Bolognese Sauce

A variation on the traditional Bolognese sauce, made with Italian sausage, is paired with classic ingredients. The savory flavors meld with the penne pasta to make this a flavorful, yet easy-to-make meal that you can have on the table in just 30 minutes.

3 | vine tomatoes |
1 | carrot |
1 | onion |
1 clove | of garlic |
1 bay | leaf |

2-1/2 tbsp. | tomato purée |
2 tbsp. | Parmesan, or to taste |
½ cup | red wine |
2 tbsp. | olive oil |

Instructions
Step 1:
Cut sausage open lengthwise, remove skin, and finely mash meat with a fork. Wash tomatoes, remove core and cut into ½” cubes. Peel carrot, quarter lengthwise and cut into ¼" pieces. Peel and finely chop onion and garlic.
Step 2:
In a pot, bring water to a boil for penne. Heat oil in a pan and sauté carrot, onion and garlic for 1 minute at medium heat. Add sausage and fry for another 2 minutes. Add tomatoes and bay leaf and cook for another 2 minutes on high heat.
Step 3:
Meanwhile, add penne and salt to boiling water and cook for about 8 minutes until al dente. Finely grate Parmesan.
Step 4:
Deglaze sausage with red wine, add tomato paste along with 3 tbsp. pasta water, and simmer over medium heat for 8 minutes. Season with sugar, salt and pepper to taste.
Step 5:
Remove bay leaf. Drain the pasta, then add to pan and mix.
Step 6:
Serve the bolognese in a deep dish. Garnish with grated Parmesan.
