Ingredients

12 shallots
1/4 cup whiskey (e.g. Jack Daniels)
2 tbsp apple cider vinegar
2 cups vegetable stock
1 tsp saffron
1 bay leaf
2 cloves
3 allspice berries
salt
1 tbsp cornstarch
4 rump steaks (7 oz)
pepper

Instructions

Step 1:

Peel and halve the shallots. Put the whiskey, shallots, vinegar, vegetable stock, saffron and spices into a pan. Season with salt and leave it to simmer for approx. 10 minutes. Remove the shallots from the broth and leave them to cool. Bring the broth once again to a boil. Mix the starch with water and then add to broth to thicken.

Step 2:

Pat the meat dry. Heat the grill pan on high and cook for about 3–4 minutes on each side. Season with salt and pepper. Add the shallots to the meat and heat until warm. Serve the meat and the shallots together with toasted bread.
