Swabian Potato Salad
Everyone loves a great potato salad, and with a pressure cooker, you’ll serve it up in no time at all.
Potato salad is a classic German favorite, especially when prepared Swabian style. With only a few ingredients, a bit of prep time and a quick cook in the Fissler stovetop pressure cooker, you can enjoy one of the most popular of all potato salad recipes.

Ingredients
| 2-1/4 lbs. | potatoes (hard-boiling, preferably Yukon Gold) |
| 1 ¼ cups | vegetable stock |
| 1 tsp. | mustard |
| Salad herbs (to taste) | |
| 4-5 tbsp. | vinegar |
| 1 | medium-sized onion |
| 2 tbsp. | oil |
| 1 tsp. | raw cane sugar |
| Salt | |
| Sugar | |
| Green rings from a spring onion, if desired |
Instructions
Step 1:
Peel and wash potatoes. Cut into slices (not too thin).
Step 2:
Mix potatoes with stock, mustard, salt, vinegar, pepper, and salad herbs inside the pressure cooker and secure the lid.
Step 3:
Cook potatoes for around 3-4 minutes. As soon as the green ring appears, depressurize and open the pressure cooker.
Step 4:
Mix in diced onions and oil. If necessary, add some salt and pepper. Sprinkle with green spring onion rings.
