Guide to Pressure Cookers and Induction

The Advantages of Pressure Cooking at a Glance

  • Fast preparation of meals
  • Gentle cooking of ingredients
  • Higher nutritional value of prepared food
  • Improved flavor
  • Better texture

How Does an Induction-Compatible Pressure Cooker Work?

A pressure cooker, also known as a steam cooker, differs from conventional pots through its method of cooking under pressure. All Fissler Vitaquick® Premium and Vitavit® Premium models are induction compatible.

  • A pressure cooker consists of a pot that is tightly sealed with a lid. The lid includes Fissler’s multi-level safety system with patented technology. Key components include the cooking crown with traffic light indicator (Vitavit® Premium), the Euromatic valve, a special sealing ring, and the ergonomic safety handle with locking indicator. These ensure the pot is sealed airtight and safely, so pressure can build up to cook food faster, more efficiently, and gently.
  • For induction compatibility, the pot base must be magnetic so an electromagnetic field can convert energy into heat. The energy-efficient Fissler CookStar® base is optimized for induction. The Superthermic® base is also suitable for induction cooktops.
  • Pressure cooking always requires a minimum amount of liquid.
  • As the liquid heats, steam forces out oxygen—which can damage vitamins.
  • Once the oxygen has been expelled, the Euromatic valve closes and pressure begins to build. The cooking indicator shows the pressure level.
  • As soon as the first ring appears, the heat can be reduced and cooking time begins.
  • At the end of the cooking time, the steam can be safely released using the handle’s steam release function. Vitavit® Premium also offers release via the cooking crown.

In 1953, Fissler invented a multi-level safety valve, making pressure cookers safe for households. All Fissler pressure cookers feature advanced safety valves and meet strict standards. Pressure only builds if the lid is properly closed. If internal pressure becomes too high, it is automatically regulated. The pot can only be opened once it has fully depressurized.

Thanks to these safety features, using a Fissler pressure cooker is very safe.

Cooking Times – A Quick Guide

Heating the water to up to 240.8 °F enables significantly shorter cooking times:

  • Cooking level 1 reaches approx. 230 °F – gentle cooking stage
  • Cooking level 2 reaches approx. 235.4 °F – fast cooking stage
  • Cooking level 3 reaches approx. 240.8 °F – express cooking stage

These levels allow for optimal preparation of foods with different heat sensitivities.

The Vitavit® Premium also offers a non-pressurized steam setting for especially gentle steaming. With Vitaquick®Premium, one ring indicates the gentle setting, two rings the express setting.

What is Each Cooking Level Suitable For?

As a general rule:

  • Express level (Level 3) equals approx. ½ or ⅓ the cooking time of a conventional pot and is ideal for meat or stews.
  • Level 2 takes about 25% longer than Level 3 and works well for less delicate vegetables.
  • Level 1 takes about 50% longer than Level 3 and is perfect for delicate vegetables or fish.

Note: The amount, shape, and texture of the food influence cooking time. Actual times may vary.

Cleaning Your Pressure Cooker

The pot body and lid of Fissler’s induction-compatible pressure cookers are dishwasher-safe - except for the removable components.

For cleaning the lid components, proceed as follows:

  • Remove the sealing ring, cooking crown, and lid handle.
  • Clean all parts by hand using a damp cloth.
  • To detach the lid handle, turn the mounting screw on the inside counterclockwise.
  • To remove the cooking crown, turn the bell nut on the inside counterclockwise.
  • After cleaning, securely reattach all components to the pot.
  • Ensure that the valve seal sits correctly in its designated groove and fits snugly against the cooking crown.
  • Also place the sealing ring back into its groove along the rim of the lid.

Important: Wear parts such as the sealing ring should be replaced after 400 cooking cycles or every 2 years, whichever comes first.
