Why Use a Steak Pan?

A steak is prepared differently than breaded meat, eggs, vegetables or fish. That’s why your pan needs to be purpose-built – making it worthwhile to have different pans ready for different cooking needs.

Stainless Steel Pans for High-Temperature Searing

Stainless steel pans are ideal for preparing steaks. They are extremely durable and can withstand the highest temperatures. Steaks can be perfectly seared in a stainless steel pan.

Fissler stainless steel pans are made of high-quality 18/10 stainless steel.

To optimize heat distribution, Fissler stainless steel pans feature an aluminum core in the base. Unlike aluminum pans, stainless steel pans are typically uncoated.

More Fat in Uncoated Pans = Less Sticking?

Even with more oil, food can stick to an uncoated pan. This depends on the temperature and cooking time. If you flip the food too early, it will stick. Once a golden crust has formed and is visible around the edges, the food will easily release from the surface.

How to sear your steak perfectly in a stainless steel pan

  • Heat the pan without adding any fat/oil on medium heat (2/3 power).
  • Wait a few minutes until the correct searing temperature is reached.
  • To test the temperature, use the water drop test: Flick a few drops of cold water into the pan with your fingers. If the drops dance across the pan like clear pearls, it’s hot enough. If they hiss and evaporate instantly, it’s still too cold.
  • Wipe out any remaining water drops from the hot pan using a paper towel.
  • Brush the steak lightly with oil on both sides. We recommend heat-resistant grapeseed oil.
  • Salt the steak on both sides, place it in the pan and press down gently with a spatula.
  • The steak will initially stick to the pan. Once it releases easily, it’s ready to be flipped.
  • To check, lift the edge slightly – if it comes off without resistance, it’s ready to be flipped or removed.

Steak Pans with Novogrill® Searing Surface

Some Fissler stainless steel pans feature the Fissler Novogrill® searing surface. Its waffle texture is ideal for low-fat and crispy frying with a grilling effect.

When used with little or no oil, tiny air pockets form in the grooves. The oil spreads evenly beneath the food. The food sears on the raised honeycomb ridges, reducing direct contact with the surface.

As a result, the Novogrill® surface helps prevent food from sticking – even without a nonstick coating.
